FRUIT AND NUTS CAKE

Ingredients :

1. 125 grams margarine
2. 125 grams caster sugar
3. ½ teaspoon vanilla powder
4. 4 eggs, separate yolks and whites
5. 125 grams of wheat flour, sifted
6. 1 teaspoon baking powder
7. 150 grams of raisins, soaked briefly in water
8. 150 grams sultanas, soaked briefly in water
9. 150 grams of almonds, roughly chopped
10 100 grams of dried apricots, sliced



Directions :

1. Preheat oven to 180 º C temperature, prepare the mold measures 30 x 22 x 15 cm, spread with margarine and sprinkle with flour, set aside.

2. Beat together margarine, sugar and vanilla until fluffy and thick

3. Enter the egg yolks one by one and continue to beat until fluffy.

4. Enter the flour and baking powder, mix well, set aside.

5. Beat the egg whites until fluffy and mix into egg mixture, stir well. Enter the raisins, sultanas, almonds and dried apricots and stir well.

6. Pour batter into pan and bake for 45 minutes, use a medium heat.

7. Lift, get rid of steam heat, cut according to taste. Serve
